Sushi is the most famous japanese food. This picture bellow was taken in Taptrip's office when the whole team had a special lunch! Some people don't like sushi because it's made of raw fish, but the yeast and the sauce gives a special flavor to it.
It's funny how many countries used to eat boiled, baked or fried meat and fish during many years, but some asian nations as Japan got used to eat it raw. If you always wondered why, this post will give you the explanation.
During Muromachi Period (1336-1573), japaneses used to transport the raw fish inside of baked rice to keep it conserved during long trips. Then, they started to eat this meal which was called sushi,
Some years after, the vinegar became the most important thing to ferment and give a good taste for the sushi. Everyone also started to eat it with shoyu which made the flavor much better.
But, making sushi was hard because took a long time and was a little expensive. Only during Edo Period (1603-1868) japaneses started to eat the raw fish freshly caught from the ocean with rice thanks to a sushiman called Hanaya Yohei. He had the idea of transforming sushi into "fast-food", making it very quickly, using simple sauces and selling on the streets for a reasonable price. This is the sushi we still eat now days, not only in Japan, but in the whole world.
